Sausage Shenanigans!

Welcome to the Sausage house!!!
Ok we are not a sausage house, but we are learning how to make some yummy sausages!
I am a sausage FANATIC!!!! It is soo amazing! Particularly the polish kielbasa!!!!
MMMM... makes my mouth water just thinking about it!
Don't you just love sausage and sauerkraut???
And I don't mean that nasty cooked/canned stuff! I mean raw fermented healthy sauerkraut. Like the stuff you find at Yankee Belles Farm Store. Ok maybe I am partial, but it is the best!!!
So we started with our Boar that we had raised since he was a baby, yes he had a name, Blackleg.

Pretty cute isn't he??? Ok, get over the cuteness. Just think, Sausage!

I may be partial, but Dad is pretty awesome!
Not to mention an expert shot, with a perfect eye!!!

I think he is pulling off the plaid pretty well don't you think?
Ok back to the sausage!

We got our cutting station all set up, and sterilized well.
Don't forget that you have to sharpen the knives!
Did you know that if your knife is sharp, you are less likely to cut yourself?
Why, you ask?
Because if you have a dull knife you will have
to work much harder to get the meat to cut,

and if it is sharp you will not be pressing and sawing so vigorously.
SO we start by cutting all the meat off of the bone, and we make sure that there is no hard grissley stuff that will stop up the grinder.
Then we run it through the grinder on a really big setting. The first time it is put through a large disk , the second time it goes through a medium disk, and the third time a small disk.
Next we season it!
Mom is the seasoning master!!!!
And she is pretty cute!!!
After we add healthy salt and organic seasonings, it is time to mix it all up!
Once the seasonings are mixed in, it goes through the grinder one last time for quality control.
Now to be stuffed!!!
I can only imagine where the saying 'I feel like a stuffed Sausage!!!' came from!!!
It is definitely a learning curve!!!
